Sweet crumbly cookies

Today we made some cookies and we thought we should share the recipe with you. On the website where we found the recipe they were called "Norwegian Knots", though we are not sure if there is any truth to it, but here is how we made it.

The Recipe:
Sugar -80 grams
Eggs - 3
Softened Butter - 125 grams
Flour - 200 grams
Cinnamon - 3 tbls. spoons
Sugar powder - 5 tbls. spoons

Boil one egg, but make sure that the yolk is not fully cooked. For the other 2 eggs separate egg whites and the yolks and mix the yolks with sugar (80g) (we mixed it with 80g of powder sugar) until it gets lighter in color. Leave the egg whites in a bowl for later.

Add the not fully cooked yolk and mix well.

Then add softened butter and beat it with mixer for couple minutes.

Slowly add flour and mix well.

You should have soft, kind of buttery dough. Roll the dough into small balls.

Now roll them in egg whites, that you should have from before, and then roll them in the sugar and cinnamon mix.

Bake them on baking paper at 345 F for about 25-30 minutes. Don't worry about placing them far from each other because they don't grow big.

Make sure that they don't get too hard, we baked them for 26 minutes.
 Enjoy!

*Tips: If you don't like cinnamon, or someone in your family doesn't, you can just roll them in sugar powder or do half and half. We used sugar powder to mix with yolk, to make it easier, and to have good texture on top used sugar in the mix with cinnamon. Also, we would suggest to roll up all the dough before you start rolling balls in egg whites.
